Dark Chocolate Cashew Blondies

Our worker squirrels promise us that nothing finishes off a perfect dinner like a gooey, sugary, chocolatey cookie. Where they’re cooking this dinner and what they’re making, we have no idea. They keep bragging, but they never share their leftovers.

Lucky, they will share the recipe. We believe there is always something we can do to make a dessert classic better. In this case our classically trained squirrel chefs have taken the classic blondie and turned it into something so much better, they ate the first three batches before telling us about them.

Since then, we’ve put cameras in the kitchen, allowing us to confirm that yes, our Dark Chocolate Cashew Blondies are in fact addictively delicious. The brown sugar, dark chocolate, cashews and vanilla pair together to create a scrumptious soft cookie with just the right amount of chocolate and crunch. If you’re allergic to chocolate, just substitute our roasted and salted cashews.

Ingredients:
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups packed light brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup chopped Nut Kreations Dark Chocolate Cashews

Directions:
  1. Preheat oven to 350°
  2. Grease an 8-inch square baking pan (butter or cooking spray both work)
  3. In one bowl, mix together the first three dry ingredients (flour, baking powder, and salt) and set aside 
  4. In a second bowl, combine the butter and brown sugar until smooth
  5. Add the eggs one at a time, mixing until combined after each one 
  6. Mix in the vanilla extract
  7. Slowly pour the dry mixture into the wet mixture while whisking until combined
  8. Add and integrate into the chopped Dark Chocolate Cashews 
  9. Put the finished batter in the prepared pan and bake 35-40 minutes, or until a toothpick inserted in the center comes out with moist crumbs 
  10. Cool completely before cutting into bars
Storage:

We’ll be the first to admit, you may not need to store any of these because they’ll be in your stomach. Just in case you hide it from your little squirrels, the best way to store these cookies is to cut them up and layer them in a tupperware container, separated by parchment paper. Put the tupperware container in the fridge, and just grab a cookie off the top when you want one. To store for longer periods of time, put the tupperware in the freezer and microwave your cookie to make it soft again. cashew blondie cookie
